The History of Fromagerie Kapuskoise

Since 2011, Fromagerie Kapuskoise has been the realization of François Nadeau's dream.

Inspired by his love for cheese and his experiences of scarcity while travelling in Asia, François embarked on a journey to become a cheese maker.

After completing extensive training in Canada and France, he dedicated himself to making his dream come true.

Today, Fromagerie Kapuskoise proudly offers a delightful range of artisanal cheeses made with local, single-sourced milk from cows, goats, and sheep.

Honouring the Heritage of Kapuskasing

Fromagerie Kapuskoise values its regional heritage and pays homage to Kapuskasing and the surrounding area by naming its aged cheeses after local lakes and rivers.

Each cheese embodies the character and soul of the region, introducing consumers to the area's rich natural and cultural heritage, not only through its names but also the milk used in each.

The Cheese

Fromagerie Kapuskoise takes great pride in its artisanal cheese creation. The cheeses are crafted using only single-sourced and local whole milk from cows, goats, and sheep.

While the cheese curds and Fresh Chèvre are exceptions, all other cheeses undergo air-ageing.

The softer cheeses are aged for a few weeks, while the firmer varieties are aged for several months or even years, all within a controlled temperature ranging between 10ºC and 15ºC.

Recognition and Where to Get the Cheese

Fromagerie Kapuskoise's commitment to excellence has attracted attention, resulting in their cheeses being featured at many Ontario outlets.

Since 2015, Chez Lizette Restaurant & Pizzeria in Kapuskasing has been featuring the cheeses on their menu, including the Kapuskoise Poutine and the Chez Lizette burger.

The cheeses have also been featured on the CN Tower 360 restaurant menu (a Feast On® partner). Additionally, they offer cheese care packages that are shipped across Canada, allowing cheese enthusiasts nationwide to savour their artisan products.
